We all face the same problem: what to do with overripe bananas. There are only so many cakes, breads and smoothies we can tolerate. It’s time for a new solution that doesn’t require any additional sugar and takes less than 3 minutes to prepare. Meet the Instant Breakfast Banana Split. It says breakfast but can be enjoyed at any time of the day or night.
Instant Breakfast Banana Split
- 1 ripe banana, peeled, covered on a plate, microwaved for 2 minutes
- 1 t each ground flax seeds, chia seeds, hemp seeds
- 1 T steel cut oatmeal, soaked in water the night before
- 1 T crumbled walnut
- 1/2 c 2% plain Greek yogurt
Sprinkle seeds over hot banana. Garnish with oatmeal, walnuts and yogurt. Try it with a cup of coffee. The contrast in flavours, textures and temperatures are so satisfying — sweet and sour; crunchy, chewy and silky smooth; piping hot and refreshingly cool. Serves 1.

I have really been enjoying your Herb Noodle Salad with Spicy PB Dressing. Thanks so much for it on behalf of my family and friends who have been eating it……I have not been able to find the Shirataki yam noodles. I’ve used rice noodles one week and I found these noodles that are made out of tofu (good but very heavy). Can you tell me where you bought the yam noodles??? And you once mentioned glass noodles in another recipe….where do you get those???
Also, since I finished my Franks’s Red Hot I tried to buy another one….but they just seem to sell the standard ones.

So many good questions. I think you’d find shirataki noodles at Asian markets. Like Miyamoto on Victoria. The tofu ones may have more nutritional value – maybe that’s why they’re heavier. Glass noodles are from Kim Phat. Look carefully at all the amazing products that go into this fantastic recipe:

yummy! just had for breakfast with a slight modification to absolutely take it over the top – I “embedded” 4 dark chocolate chips in the banana before microwaving…..

I tried a modification too. Spooned on some melted frozen raspberries and it looked and tasted so good!
